Another Summer Salad

This is such a ridiculously simple salad that I'm just embarrassed to not have thought of first. I had it at a Tex-Mex restaurant for a whopping $6.50, and it's just beyond easy.

For 1 Large Bowl (which I just eat by myself):

  • 1/4 head of iceberg lettuce, chopped
  • 1 tomato, seeded and diced
  • 1/4 onion, diced
  • cilantro
  • jalapeno
  • juice of 2-3 limes
  • 1 avocado, chunked
  • shredded cheese (cheddar or jack)

Toss the lettuce, tomato, onion, cilantro, and jalapeno with the lime juice. Have salad with avocado and cheese on top.

No oil. You can have it without the cheese, and it still tastes good and is probably a bit healthier without.

  8. Yum, that is sort of thing that I also eat large bowls of. Although people do tend to complain of loud crunching noises when they are watching TV.
